
Finally succeeded in making that "sort-of" perfect Chawanmushi!. Perfecto.
( For 1 pax)
1 egg,
1 eggshell of chicken stock
2 teaspoons of stock from the soaked shitake mushrooms
Lightly beat eggs and stock together until all fairly mixed
( try to prevent bubbles, )
Pour mixture into a small bowl, add the shitake and ginko nuts ( u can be creative)
And the trick here is... making sure that there are no bubbles in the egg mixture.
Boil small amount of water in a saucepan with a stand
Ad as when the boiling, stand the bowl on top of it and LOWER the fire till u can see the water just bubbling a bit.

And there you go... :) when set, just add soya sauce for taste

Newae, thats my dinner.. im on a diet again. or more like on a "less eating" spree.
